Spinach & Pear Salad

Here’s a quick salad idea for lunch or a light supper. The combination of fruit and cheese make this salad sweet enough to enjoy without a dressing.

Serves: 2          Ready In: 10 minutes

Ingredients

  • 2 cups of baby spinach
  • 1 pear, sliced
  • 6 dates, sliced
  • 4 mushrooms, sliced
  • 2 tbsp of chopped walnuts
  • Fig-Flavoured Goat Cheese, to taste

Directions

1. Wash and dry spinach leaves and place in a large bowl

2. Add remaining ingredients, to goat cheese, and toss

3. Serve with crumbled goat cheese on top
