Fiesta Spaghetti Squash

This is a great meal to whip up on a busy evening. It’s quick and easy, healthy and full of mexican flavour!

Serves: 6         Prep Time: 40 minutes          Ready In: 50 minutes


  • 1 spaghetti squash
  • 2 tbsp of olive oil
  • 3-4 cloves of garlic, minced
  • 1 onion, chopped
  • 1/2 red pepper, chopped
  • 1/2 orange pepper, chopped
  • 1/2 green pepper, chopped
  • 1 cup of black beans
  • 1 cup of corn
  • 2 tbsp of Epicure Taco Seasoning – El Paso seasoning would work too)
  • 1/2 cup of grated Tex Mex cheese, optional
  • 1 avocado, diced, optional
  • Sour cream and/or salsa, if desired


1. Preheat oven to 350 degrees

2. Place spaghetti squash in the oven and bake for 30-40 minutes, until soft

3. Meanwhile, chop garlic and veggies, rinse beans and corn, and grate the cheese

4. Heat olive oil in a large fry pan and sautee the garlic and onions. Add peppers and cook until soft

5. Add beans and corn to the pan, along with the Taco Seasoning, and stir

6. Top with cheese and let cook until the cheese melts

7. Serve with diced avocado and garnish with a dollop of sour cream or salsa
