Grilled Zucchini, Goat Cheese & Pesto Panini

I can take no credit for this deliciously simple grilled panini. I found a link to this recipe on one of my favourite sites Two Peas in Their Pod (http://www.twopeasandtheirpod.com/35-zucchini-recipes/). The only change I made was adding the balsamic vinegar to the pesto sauce!

Here’s what I did:

Serves: 2          Prep Time: 10 minutes          Ready In: 15 minutes        

Ingredients

  • 1/4 cup sun dried tomatoes
  • 1 clove of garlic
  • 1 tbsp basil
  • 1/2 avocado
  • 2 tbsp balsamic vinegar
  • 1 zucchini, sliced horizontally
  • 4 slices of tomato
  • 4 tbsp goat cheese
  • 4 slices of bread

Directions

  1. Puree sun dried tomatoes, garlic, basil, avocado and balsamic vinegar using a food processor or immersion blender
  2. Grill zucchini on the panini grill
  3. While zucchini is grilling, spread pesto sauce on two slices of bread and top with tomato slices
  4. Spread goat cheese on the other two slices of bread and top with grilled zucchini
  5. Assemble sandwich and grill for approximately 5 minutes
