Black Bean Burritos

I love mexican food and an excuse to use homemade guacamole. I whipped this up after work today. It was quick, easy, very satisfying and most importantly, delicious 🙂

Serves: 2-3          Prep Time: 15 minutes          Ready In: 30 minutes


  • 1 tbsp olive oil
  • 1 can of organic black beans
  • 1-2 cloves of diced garlic
  • 2 tbsp salsa
  • 2 tbsp of water
  • 1 tbsp Epicure Taco Seasoning
  • 1 tbsp olive oil
  • 1 red pepper
  • 1 jalapeno pepper
  • 1/2 green chilli pepper
  • 1/4 cup corn
  • 4 tortilla shells
  • 1/2 cup cheddar cheese, grated
  • guacamole or sour cream, if desired


  1. Preheat oven to 350
  2. In a cast iron fry pan, heat oil.
  3. Rinse beans, and cook for 5 minutes.
  4. Meanwhile, chop peppers
  5. Once the beans are heated and soft, add garlic, salsa, seasoning and water
  6. Using a potato masher, mash the ingredients and stir until well combined
  7. Remove from fry pan and add another tbsp of oil to saute the peppers
  8. Spread bean mixture on 2 tortilla shells and top with sauteed peppers
  9. Add 1/4 cup of shredded cheese to each shell and top with the remaining tortilla shell
  10. Place two burritos on a baking sheet and bake for approximately 5 minutes on the bottom rack
  11. I whip up homemade guacamole during this time (see recipe under “Dip Recipes”)
  12. Next, turn the oven to broil, keep the burritos on the bottom rack and let broil for approximately 5 minutes, until the tortillas turn a nice golden brown
  13. Remove from oven, let cool for 2 minutes, cut into 4 and serve with guacamole or sour cream
