Cheesy Broccoli Quinoa

I got home from work a little later than planned and starred into a fridge on the eve of grocery shopping day. I worked with what I had, left over broccoli, asparagus and zucchini from previous meals this week and whipped up this quick and easy meal.

Serves: 2           Prep Time: 20 minutes           Ready In: 30 minutes

Ingredients:

  • 1/2 cup quinoa
  • 1 1/4 cup water or vegetable broth
  • 2 tbsp olive oil
  • 1 head of broccoli
  • 6-8 pieces of asparagus
  • 1/2 cup chopped zucchini
  • 1/2 cup heavy cream
  • 1/4 cup of shredded parmesan cheese

Directions:

  1. Soak quinoa, and cook in water or vegetable broth
  2. While quinoa is cooking, chop vegetables and heat oil in a fry pan
  3. Saute veggies for 5-10 minutes, until soft
  4. Add quinoa, cream and cheese and stir until combined

    When I read asparagus, broccoli and zucchini, with quinoa, and cheese, I had to gasp. Can’t wait to see how the flavors come out! Will be trying it soon! You have a lot of amazing recipes I want to try, thanks!
