Curried Spinach & Squash Lentils

A heart warming and satisfying meal that warms the heart & soul! Quick, easy and doubles as a aromatic house freshener!

Serves: 4          Prep Time: 10 minutes          Ready In: 40 minutes

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic
  • 2 tbsp flour
  • 1 tbsp curry
  • 1 tbsp ginger
  • 1 tsp cumin
  • 1 tsp fennel seeds
  • 1 cup lentils
  • 3 cups vegetable broth
  • 1 cup water
  • 1 sweet potato
  • 3 cups of fresh spinach
  • Naan bread or rice

Directions

  1. Heat olive oil in fry pan
  2. Saute onion and garlic until soft
  3. Add flour and spices and stir for 1 minute
  4. Add lentils, broth and water and bring to a boil
  5. Meanwhile, peel and cube sweet potato
  6. Reduce heat, add sweet potato, cover and let simmer for 30 minutes, stirring occasionally
  7. Once liquid has been absorbed, add spinach and stir until wilted
  8. Serve over a bed of rice or with Naan bread
