Mexican Quinoa Bake

This deliciously satisfying meal may require a bit of prep, but it’s well worth the extra time 🙂 I made this after work today, including the homemade enchilada sauce and guacamole.

Serves: 4          Prep Time: 30 minutes          Ready In: 1 hour

Ingredients:

Quinoa

  • 2 cups of water
  • 1 cup of quinoa
  • 3 tbsp

Enchilada Sauce (or you can buy this pre-made)

  • 3 tbsp of olive oil
  • 1/4 chili powder
  • 1 tbsp of flour
  • 1 cups of pureed tomatoes (or tomato sauce)
  • 1 1/2 cup of vegetable broth
  • 1 tsp oregano
  • 1/2 tsp cumin

Bake

  • 2 tbsp olive oil
  • 3 cloves of garlic
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/2 orange pepper, chopped
  • 1/2 yellow pepper, chopped
  • 1 tbsp lime
  • 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 can of black beans, rinsed and drained
  • 1 1/2 cup of shredded cheddar, Tex-Mex or marble cheese

Directions

Quinoa

  1. In a small sauce pan, bring water and quinoa to a boil
  2. Reduce heat, cover and let quinoa absorb water, approximately 15 minutes

Enchilada Sauce

  1. In a small sauce pan, heat olive oil and add chilli powder and flour whisking for 2 minutes
  2. Add tomato puree/sauce, and broth and stir
  3. Add spices, reduce heat to low and let simmer for 15 minutes

Bake

  1. While quinoa and sauce are cooking, start chopping vegetables
  2. Heat oil in a large fry pan
  3. Add onion and garlic, sauteing for 5 minutes
  4. Add peppers, and saute for another 3-5 minutes
  5. Add lime juice and spice and stir until combine
  6. Next, toss in black beans and quinoa, stir until combined
  7. Now toss in roughly 1-1/2 cups of the enchilada sauce
  8. Finally, toss in 1 cup of shredded cheese
  9. Grease a 9×9 pan and pour the bake into the pan
  10. Top with remaining 1/2 cup of cheese
  11. Cover with tin foil and bake at 350 for 20 minutes
  12. Remove foil and bake for another 10 minutes until the cheese has melted
  13. Serve with guacamole and/sour cream
