Mmmmm, baked beans! Always a staple in my cupboards – winter, spring, summer or fall. I whip up a pot and bottle them in mason jars, making for last minute lunch ideas or handy meals to take in the woods, camping or at the cabin.
I’ve made this recipes twice now and it hasn’t let me down. This site has actually become a personal favourite of mine, mainly because I tend to gravitate towards anything local, but I’ve honestly had success with every recipe I’ve tried to date.
I followed the recipe to a tee, which is rare for me. The only thing is I had to cook it a little longer than suggested. At around 4 hours, I’ll get the big pot of mason jars on the stove, and by the time it comes to a roaring boil, the beans are ready. After transferring and sealing the jars, you can expect to hear the lids popping before you even get the dishes cleaned up and voila, you’ve got about 10 meals bottled and ready to eat!
