Here’s a refreshing drink for the summer inspired by my moms homemade ginger tea. Growing up whenever I had a belly ache, mom would put on the kettle and fill a mug with hot water and a tsp of ginger essence. It’s a home remedy I continue to use to this day. But with the excessive heat and humidity this summer I decided to try and create an iced version.
- 350ml of club soda
- 1-2 tsp Ginger Essence
- 1 tsp honey or sweetener of choice
- Fill a large glass with ice
- Add remaining ingredients and stir (start with 1 tsp of ginger and adjust to please your taste buds)
- Serve with a slice of lemon or lime if desired
